Here's an example.

Materials:
Approx. 3 oz. worsted weight yarn
Size 8 (16") circular needles and set of double points, or whatever size is needed to get gauge
Large eyed needle for sewing up the top
Scissors
 
Gauge: 4 stitches to 1", 6 rows to 1"
 
Cast on (64 Child's size),  or 76 stitches ( adult) place marker and join together without twisting.
 
K2, P2 for 2 "
 
Begin patterns stitch as follows:
Row 1: Knit first two stitches together, leaving them on the needle, knit again in
the first stitch (one closest to the end of the left needle ) and drop both stitches off the needle, P 2, repeat around
Row 2: K2, P2
Rows 3 and 4: Knit
 
Repeat pattern stitch until piece measures  (6" for a child) 7"(adult)
 
Decrease Rows:
Row 1: K2 twisting , P2 together repeat around
Row 2: K2, P1 around
Row 3 and 4: Knit
Row 5: K2 tog, P1 around
Row 6: K1, P1 around
Row 7 and 8: Knit
Row 9: K2 tog, K1 around
Row 10: Knit
Row 11: K 2 tog
Row 12: K
Repeat rows 11 and 12 until 5 stitches remain.  Cut yarn leaving a 10" tail.  Run thread through the 5 stitches and fasten off. Weave end into the inside of the hat and finish yarn ends.

You can replace the ribbing at the bottom of the hat with a plain band of  Knit 1 row, Purl 1 repeat for 1 and 1/2" or you can make a roll brim by knitting for 10 rows then Purling 2 rows before beginning your pattern.
